BANANA AND WALNUT BREAD

Ingredients

  • 1 bar of butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 ¼ cup cake flour
  • cup whole wheat flour
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 cup fried ripe and chopped
  • 1 tsp. cinnamon powder
  • ¼ tsp. powdered spice cloves
  • Pinch nutmeg
  • ½ tbsp. grated fresh ginger
  • 1 cup chopped walnuts
  • 1 cup dried cranberries
  • ¼ cup corn oil
  • ½ cup milk

Instructions 

  • Heat the oven to 325 degrees.
  • In the electric mixer, mix the butter, brown sugar and granulated sugar until creamy. Add the eggs to one egg, beating constantly until creamy. Then add the flours little by little and continue beating. Add the vanilla extract, baking soda, minced ripe fruit, walnuts, cranberries, corn oil and milk. Blend until creamy.
  • Pour the mixture into a poundcake mold. Bake for 45-50 minutes.
  • Let cool, unmold, slice and serve.
